Pasta, Star Wars, and the Swan Song of 2016

Last night was spent at home in pajamas making homemade pasta at 8 pm, eating at 10 pm after watching The Force Awakens. This is the first attempt at homemade spinach herb pasta. Not too shabby. 

Yep - I was collecting surviving herbs in bits of remaining snow earlier in the day. Yes, I am that lady. 

You can find recipes for homemade pasta about everywhere, but I always like going to a proven and reliable resource.  (Always know your sources!) So, consulting an Italian on the matter just seems to make sense when making Italian food. (duh.)

I added to the basic dough:

1/3 cup minced fresh spinach
2 tablespoons of fresh minces herbs (Rosemary, parsley, thyme, oregano)
1 tablespoon of roasted crushed/minced garlic

I could have used my stand mixer with the dough hook, but I like doing things by hand, especially when trying a new recipe or technique for the first time. Going old-school helps you connect to the ingredients and see how they behave. Kneading and rolling dough is also a decent 10 minute arm workout. You get the double reward to burning some calories to eat some tasty calories. Balance people...all about balance.
